For the Beef
- 1 lb ground beef
- 1 tbsp maple syrup
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp black pepper
For the Biscuits
- 1 cup cooked seasoned beef (about 5 oz)
- 1 cup cottage cheese
- 1/4 cup milk, plus more for brushing tops
- 1 cup shredded cheddar cheese
- 1/3 cup green pepper, finely diced
- 1 tbsp maple syrup
- 2 tbsp salted butter, melted
- 2 cups bread flour
- 1 tbsp baking powder
- 1/4 tsp baking soda
- 1 tsp sea salt
Instructions
- Cook ground beef with salt, black pepper, paprika, garlic powder, onion powder, and maple syrup over medium heat, breaking it apart until fully cooked. Set aside and measure out 1 cup (about 5 oz).
- Preheat oven to 425 degrees F and line a baking sheet with parchment paper. Blend cottage cheese and milk together until creamy. Combine the blended mixture with the shredded cheddar cheese, cooked ground beef, diced green pepper, maple syrup, and melted butter.
- In a separate large bowl, mix together the bread flour, baking powder, baking soda, and sea salt. Add the wet ingredient mixture to the dry ingredients and stir until just combined. The dough will be crumbly and look slightly dry - this is normal.
- Turn the dough out onto a clean, floured work surface. Use floured hands to bring the dough together, working it until it is less crumbly and holds as a cohesive mass.
- Flatten the dough out into a rectangle about 3/4 inch thick. Fold one end of the rectangle into the center, then fold the other end over it, like folding a letter. This creates layers in the biscuits.
- Flatten the dough again into a narrower rectangle, again about 3/4 inch thick. Repeat the same letter-fold process - fold one end to the center, then the other end over it.
- Cut the dough into 6-9 biscuits. Use a knife for square biscuits or a biscuit cutter for round ones. Place on the prepared baking sheet.
- Brush the tops with milk and bake for 20-27 minutes, depending on the size of your biscuits (smaller ones will cook faster), until the tops are slightly browned and the centers are set. Allow to cool for 10 minutes before serving. Optional: brush tops with butter and maple syrup before serving.
