Creole Couscous with Sausage
A one-pot creole-spiced pearled couscous with sausage, bell pepper, tomatoes, and aromatics. Sausage is cooked in the air fryer and tossed in at the end.
Ingredients
- 1 bell pepper, diced
- 1 medium cooking onion, diced
- 2-3 celery stalks, diced
- 3 cloves garlic, minced
- Oil, for sauteing
- 1 to 1.5 lb sausages (any kind)
- 1 Tbsp paprika
- 1/4 tsp cayenne
- 1 tsp dried thyme
- 2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups stock
- 1.25 cups strained tomatoes
- 2 cups pearled couscous
- Jalapenos, de-seeded and sliced, for garnish
Instructions
- Saute the diced bell pepper, onion, celery, and minced garlic in oil over medium-high heat until softened.
- Poke holes in the sausages and cook in the air fryer at 375F for 15 minutes, or until cooked through. Slice once cooked.
- Add the paprika, cayenne, thyme, oregano, salt, and pepper to the vegetables and cook for 1-2 minutes to bloom the spices.
- Add the stock, strained tomatoes, and pearled couscous to the vegetables. Stir and cover, then cook over medium heat, stirring occasionally, for 8-10 minutes until the liquid has soaked up.
- Toss in the sliced sausage and garnish with sliced de-seeded jalapenos.
