Creole Couscous with Sausage

A one-pot creole-spiced pearled couscous with sausage, bell pepper, tomatoes, and aromatics. Sausage is cooked in the air fryer and tossed in at the end.

  1. Saute the diced bell pepper, onion, celery, and minced garlic in oil over medium-high heat until softened.
  2. Poke holes in the sausages and cook in the air fryer at 375F for 15 minutes, or until cooked through. Slice once cooked.
  3. Add the paprika, cayenne, thyme, oregano, salt, and pepper to the vegetables and cook for 1-2 minutes to bloom the spices.
  4. Add the stock, strained tomatoes, and pearled couscous to the vegetables. Stir and cover, then cook over medium heat, stirring occasionally, for 8-10 minutes until the liquid has soaked up.
  5. Toss in the sliced sausage and garnish with sliced de-seeded jalapenos.
