Crispy, Juicy Mayo Chicken Wings
Source: @seattlehanddoc
Oven-baked chicken wings coated in a thin mayo-yogurt mixture that acts as a high-fat binder, locking in moisture while achieving a golden, crispy exterior. Serve as-is or toss in your favorite sauce.
Yield: 4 servings
Cook Time: 35-40 minutes
Total Time: About 45 minutes
Ingredients
- 2 lbs chicken wings, patted dry
- 2 tbsp plain yogurt
- 3 tbsp mayonnaise
- 3 tbsp neutral oil
- 1 tsp paprika (or smoked paprika)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- Black pepper, to taste (optional)
Instructions
- Preheat oven to 400 degrees F (200 degrees C). ```
- Pat the chicken wings thoroughly dry with paper towels.
- In a large bowl, combine the yogurt, mayonnaise, oil, paprika, garlic powder, onion powder, kosher salt, and black pepper if using. Mix until smooth.
- Add the wings to the bowl and toss until evenly coated. Aim for a thin layer - do not overdo the mayo coating.
- Arrange wings in a single layer on a wire rack set over a baking sheet, or directly on a lined baking sheet.
- Bake for 35-40 minutes, flipping halfway through, until golden brown and crispy.
- Optional: Broil for 1-2 minutes at the end for extra crispiness. Watch closely to avoid burning.
- Eat as-is or toss in your favorite sauce before serving.
