A Doctor’s Favourite Lunch
A baked sweet potato and vegetable egg dish with cheese, cooked until golden brown.
Ingredients
- 2 sweet potatoes
- 1 cup chopped broccoli
- 1/2 cup peas
- 1/4 red onion, sliced
- 3 eggs, whisked and seasoned with salt, pepper, and chilli flakes
- 1 handful cheese
Instructions
- Preheat oven to 180°C.
- Cook the sweet potatoes until soft using microwave, roasting, or air fryer.
- In a prepared 9-inch dish, smash the sweet potatoes so they cover the base.
- Add the vegetables and pour over the whisked eggs. Sprinkle over the cheese.
- Bake for 30–40 minutes until golden brown.
