A baked sweet potato and vegetable egg dish with cheese, cooked until golden brown.

  1. Preheat oven to 180°C.
  2. Cook the sweet potatoes until soft using microwave, roasting, or air fryer.
  3. In a prepared 9-inch dish, smash the sweet potatoes so they cover the base.
  4. Add the vegetables and pour over the whisked eggs. Sprinkle over the cheese.
  5. Bake for 30–40 minutes until golden brown.
