Healthy Panda Express Orange Chicken

Ingredients
Chicken
- 24 oz boneless skinless chicken thighs, diced
- 30 g cornstarch (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- Cooking oil spray
Orange Sauce
- 320 g diet orange juice
- 80 g low sodium soy sauce
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- 1 teaspoon orange zest
- 1 tablespoon rice vinegar
- Red pepper flakes (optional)
- Cornstarch slurry (from reserved cornstarch and water)
For Serving
- 2 cups cooked white rice
Instructions
- Dice the chicken thighs. In a bowl, mix the cornstarch with garlic powder, onion powder, black pepper, and salt. Coat the chicken thoroughly in the seasoned cornstarch.
- Spray coated chicken lightly with cooking oil. Air fry at 400°F for 15–18 minutes, shaking and lightly spraying again after 12 minutes, until cooked through and crispy.
- While the chicken cooks, combine the diet orange juice, soy sauce, garlic paste, ginger paste, rice vinegar, orange zest, optional red pepper flakes, and remaining cornstarch slurry in a saucepan.
- Simmer over low–medium heat for about 10 minutes, stirring occasionally, until the sauce thickens.
- Once the sauce is thickened, toss the cooked chicken in the sauce until evenly coated.
- Serve immediately over cooked white rice.
