  1. Dice the chicken thighs. In a bowl, mix the cornstarch with garlic powder, onion powder, black pepper, and salt. Coat the chicken thoroughly in the seasoned cornstarch.
  2. Spray coated chicken lightly with cooking oil. Air fry at 400°F for 15–18 minutes, shaking and lightly spraying again after 12 minutes, until cooked through and crispy.
  3. While the chicken cooks, combine the diet orange juice, soy sauce, garlic paste, ginger paste, rice vinegar, orange zest, optional red pepper flakes, and remaining cornstarch slurry in a saucepan.
  4. Simmer over low–medium heat for about 10 minutes, stirring occasionally, until the sauce thickens.
  5. Once the sauce is thickened, toss the cooked chicken in the sauce until evenly coated.
  6. Serve immediately over cooked white rice.
