Jalapeno Popper Chicken Salad
```A creamy, spicy chicken salad inspired by jalapeno poppers, made with rotisserie chicken, Greek yogurt, bacon, and Monterey Jack cheese. Makes 6 servings of about 1 cup each. Great served in lettuce wraps or with jalapeno popper Popcorners.

Ingredients
- 1 whole rotisserie chicken, deboned and finely chopped
- 3/4 cup plain nonfat Greek yogurt
- 2 tbsp Hellman's light mayo
- 5 pieces center-cut bacon, cooked and crumbled
- 4 oz Monterey Jack cheese, shredded
- 3 green onions, chopped
- 3 large jalapenos, diced
- 1/4 cup Hidden Valley ranch seasoning
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
Instructions
- Cook the bacon until crispy, then crumble and set aside.
- Debone the rotisserie chicken and chop the meat finely.
- In a large bowl, combine the chopped chicken, Greek yogurt, and light mayo. Mix well.
- Add the crumbled bacon, shredded Monterey Jack cheese, chopped green onions, and diced jalapenos. Stir to combine.
- Add the ranch seasoning and season to taste with salt, pepper, and garlic powder. Mix until evenly combined.
- Serve in lettuce wraps or with jalapeno popper Popcorners on the side.
