Sausage Cheddar Maple Breakfast Bake
A savory-sweet baked breakfast made with breakfast sausage, cheddar cheese, cottage cheese, and a touch of maple syrup. Perfect for brunch or meal prep.
Ingredients
- 1 cup flour (sub gluten-free if desired)
- 1 tablespoon baking powder
- 2 eggs
- 1/2 cup cottage cheese
- 1/3 cup maple syrup
- 3/4 cup milk
- 1/2 pound ground breakfast sausage
- 1 cup shredded cheddar cheese
- Maple syrup, for serving
Instructions
- Preheat oven to 375 degrees. Grease an 8\" x 8\" baking dish and line with parchment paper.
- Heat a large skillet, add sausage and cook until browned, breaking into small pieces. Set aside.
- In a large mixing bowl combine flour, baking powder, eggs, cottage cheese, milk and maple syrup. Mix well, then fold in sausage and cheese.
- Pour batter into baking dish and spread evenly. Bake for 35–40 minutes, or until slightly browned and a toothpick inserted in the center comes out clean.
- Slice and serve with extra maple syrup.
