The Best Thick Bacon Sliders

Instructions

  1. In a large bowl, combine the ground beef with kosher salt, black pepper, garlic powder, and paprika. Mix until just combined — do not overwork the meat.
  2. Divide the beef into 24 equal portions (approximately 4 oz each) and form into slider-sized patties slightly wider than your rolls.
  3. Cook the turkey bacon in a large skillet over medium heat until crispy. Remove, chop roughly, and set aside. Reserve a small amount of drippings in the pan.
  4. In the same skillet over medium-low heat, add the diced onion and cook until softened and beginning to caramelize, about 15 minutes.
  5. Add the chopped bacon back to the skillet along with the honey and brown stevia. Stir to combine and cook until the mixture thickens into a jam, about 5 to 8 more minutes. Remove from heat and set aside.
  6. Cook the beef patties on a grill or skillet over medium-high heat for 3 to 4 minutes per side, or until cooked through. In the last minute of cooking, top each patty with a slice or portion of low-fat American cheese and cover to melt.
  7. Spread a small amount of light mayo on the inside of each slider roll. Place a cheesy patty on the bottom bun, top with a spoonful of the sweet bacon onion jam, and close with the top bun. Serve immediately.
