The Best Thick Bacon Sliders
```High-protein beef sliders topped with a sweet bacon onion jam, low-fat American cheese, and light mayo. Makes 24 sliders.
Ingredients
Beef Patties
- 6 lb 96/4 ground beef
- 3 tbsp kosher salt
- 1 tbsp black pepper
- 3 tbsp garlic powder
- 1 tbsp paprika
Sweet Bacon Onion Jam
- 15 slices turkey bacon
- 1 large white onion, diced
- 2 tbsp honey
- 1/3 cup brown stevia
Other
- 18 slices low-fat American cheese
- 1/4 cup light mayo
- 24 slider rolls
Instructions
- In a large bowl, combine the ground beef with kosher salt, black pepper, garlic powder, and paprika. Mix until just combined — do not overwork the meat.
- Divide the beef into 24 equal portions (approximately 4 oz each) and form into slider-sized patties slightly wider than your rolls.
- Cook the turkey bacon in a large skillet over medium heat until crispy. Remove, chop roughly, and set aside. Reserve a small amount of drippings in the pan.
- In the same skillet over medium-low heat, add the diced onion and cook until softened and beginning to caramelize, about 15 minutes.
- Add the chopped bacon back to the skillet along with the honey and brown stevia. Stir to combine and cook until the mixture thickens into a jam, about 5 to 8 more minutes. Remove from heat and set aside.
- Cook the beef patties on a grill or skillet over medium-high heat for 3 to 4 minutes per side, or until cooked through. In the last minute of cooking, top each patty with a slice or portion of low-fat American cheese and cover to melt.
- Spread a small amount of light mayo on the inside of each slider roll. Place a cheesy patty on the bottom bun, top with a spoonful of the sweet bacon onion jam, and close with the top bun. Serve immediately.
